We go through our fair share of food in this household. As any mother knows it can be a challenge to keep healthy ready-to-eat food on hand. I say this after literally eating the following 10 minutes ago for a late after church “supper”; one jelly biscuit, a hand full of Doritos and the rest of our trail-mix. Okay I’m not exactly climbing the food pyramid but in my defense my children ate a much healthier “picnic supper” in the parking lot before church. Sundays are always a challenge. My point here is, I try to keep foods in the house that are easy to grab and go while at the same time being fairly nutritious. Here is one of our new favorite recipes to keep on hand.
Berry and Almond Granola
1/3 cup honey
1/3 cup light brown sugar
6 tablespoons unsalted butter, melted
1/2 teaspoon salt
4 cups old-fashioned rolled oats
1/3 wheat germ
1/2 cup dried cranberries
1/2 cup dried blueberries
1/2 cup sliced almonds
Line 2 cookie sheets with foil, heat oven to 300 degrees. Combine honey, sugar, butter, and salt. Add oats and wheat germ, then stir until blended. Spread granola onto cookie sheets and bake 20 mins., stirring once halfway through. Remove from oven and stir again. Cool for 15 min., then add in berries and nuts. Store in a airtight container.
The kids love to help cook and this is a great recipe for them to help with. We eat this by itself or in yogurt parfaits for breakfast. It’s a great snack anytime.
