Our New Favorite Snack

I came across this snack the other day and decided it (A). looked easy enough, (B). included ingredients that I knew and liked and that my kids would eat, and (C). looked fairly healthy.  Well I’m happy to report that I’ve made it twice now (doubled the recipe the second time) and it has been quite a hit at our house.  It’s nice to have them on hand stored in the frig for those times when you just want something quick and tasty.  The original recipe is from Smashed Peas and Carrots, I’ve posted it here with my notes in parenthesis.  Keep in mind that the recipe is pretty versatile, you could take out the chocolate chips and add cranberries or something similar.

No-Bake Energy Bites
(makes 18-20 bites)
1 cup oatmeal ( I used old fashioned rolled oats)
1/2 cup peanut butter (or other nut butter)
1/3 cup honey
1 cup coconut flakes
1/2 cup ground flaxseed ( I used wheat germ)
1/2 cup mini chocolate chips (I used regular)
1 tsp vanilla
Mix everything above in a medium bowl until thoroughly incorporated.  Let chill in the refrigerator for half an hour.  Once chilled, roll into balls and enjoy!  Store in an airtight container and keep refrigerated for up to 1 week.

I’ve found that I’ll grab one when I would normally go for a cookie, piece of candy, etc. so I like that they’ve replaced some processed sweets for us.  Let me know if you try them and what you think.
